Berries & Chia Pudding
- 1 cup fresh blueberries, cherries or strawberries
- 1/2 cup coconut milk
- 2 tablespoons honey, or to taste
- 1/2 teaspoon vanilla essence
- 1 1/2 tablespoon Karen Berrios Chia Seeds
Place berries of your choice, coconut milk, honey and vanilla essence in a blender and blend until smooth.
Place Karen Berrios Chia Seeds in a bowl, pour mixture on top, and whisk thoroughly. Let stand between 10-12 minutes and whisk again.
Refrigerate between 3-4 hours. Mix pudding before serving.
Serve into individual cups and use a garnish of your choice.
