Blueberry Scones

Ingredients:

Dough:

1 1/2 cups oat flour

1/2 cup almond flour

1/3 cup organic brown sugar

1 tsp cinnamon

2 scoops vanilla protein

2 tsp @shopkarenberrios maca 

1/2 tsp baking powder

1/2 tsp baking soda

1 cup fresh blueberries

 

Wet ingredients:

1 tsp vanilla extract

1/4 cup unsweetened  applesauce

1 flax egg (1 tbsp ground flax + 2.5 tbsp water)

3 tbsp melted vegan butter

1/4 cup vegan creamer

3 tbsp melted coconut butter 

 

Directions:

  • Preheat oven to 350 F.
  • In a bowl, add flax egg and let sit for 5 minutes then add in wet ingredients and whisk together + add in dry and fold together.
  • You might need to use clean hands to knead everything to a dough + parchment line a baking sheet + add dough on top, grease hands with coconut oil and mold into a round disk.
  • Use a knife to cut into 8 triangles + gently spread them apart.
  • Bake for 22-25 minutes.
  • Remove from oven and cool for 5 minutes then transfer to wire cooling rack
  • Drizzle with coconut butter + ennjoooyyy :)
