Easy Maca Cinnamon roll in a mug

Ingredients:

Cinnamon roll:

  • ¾ cup oat flour
  • 2 tbsp. Karen Berrios Maca Powder
  • 2 tbsp. Karen Berrios Lucuma Powder
  • 3 tbsp. Coconut sugar or Monk fruit
  • 1/3 cup Almond, coconut or soy milk
  • 1 tsp. vanilla extract
  • 1 tsp. Baking powder

Filling:

  • 2 tbsp. coconut oil or vegan butter (melted)
  • 3 tbsp. coconut sugar
  • 1 tsp. ground cinnamon

Frosting (optional):

  • ¼ cup vegan yogurt
  • 1 tsp. vanilla extract
  • 1 tbsp. Karen Berrios yacón syrup

Cooking instructions:

  1. Place all dry ingredients in a medium mixing bowl. Add in liquid ingredients and stir until form a dough.
  2. Place the dough in your table and press it with your rolling pin until have no more than 5 mm thick.
  3. Fill it with coconut oil, coconut sugar and ground cinnamon. Roll it and place it in your mug.
  4. Cook in microwave for 4-5 minutes. Top with your frosting and enjoy this easy recipe as a breakfast, snack or dessert.
