HOMEMADE PUMPKIN LUCUMA COOKIES WITH TURMERIC FROSTING

INGREDIENTS:

COOKIES:
  • 1 cup Sweet Lucuma Butter
  • 1/2 cup pumpkin puree
  • 1/4 cup honey
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
FROSTING:
  • 2 cups coconut sugar 
  • 1/4 cup coconut oil
  • 2 tablespoons almond milk
  • 2 capsules Karen Berrios Turmeric Extract 
  • 1 teaspoon vanilla extract
  • Pinch of salt

INSTRUCTIONS:

COOKIES:

Preheat the oven to 375°F . Get your cookie sheet ready, placing parchment paper on top. In a bowl, combine all the ingredients, and mix until a thick batter is formed.  Cut with pumpkin-shaped wet cookie cutter (to prevent sticking). With a straw, cut out eyes in pumpkin cookies. Place cookies 2 in. apart on the cookie sheet. Bake between 15-17 minutes or until the edges are golden. Remove from the oven and allow to cool completely.

FROSTING:

In a food processor, mix all the ingredients, process until smooth and use immediately. Frost cookies with frosting. Before frosting sets, remove frosting from the eye area with toothpick. It will solidify after an hour or so. 

And now enjoy!

Heat it in the microwave for about 30 seconds to liquefy again before drizzling or piping it over your finished baked goods. Keep in the refrigerator in a covered container.
