LAUREN'S GF VEGAN SALTED CARAMEL BROWNIES

Ingredients:

Brownie layer:
  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup coconut sugar 
  • 1/2 cup Karen Berrios Cacao Powder
  • 1/2 cup applesauce
  • 1 tbsp vanilla
  • 1 tbsp baking powder
  • 1/2 cup coconut oil
Caramel Layer:
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1/2 cup cashew butter
  • 1 tbsp vanilla
  • Dash of salt
Chocolate Layer:
  • 1 cup chocolate chips
  • 1/2 cup coconut oil
  • Sea salt for the top

Instructions:

  • Preheat oven to 350 F. Combine dry ingredients for brownie layer and then stir in wet ingredients.
  • Pour into 8x8 baking pan lined with parchment paper. Bake for approximately 25 min.
  • While brownies are baking, prepare the caraceml in a saucepan by combining the ingredients and stirring over low-med heat until thick. Remove from heat and let cool.
  • Once the brownies have cooled, pour the caramel layer over the top and place in the freezer until hardened.
  • Melt chocolate and coconut oil and pour over the top of the caramel layer.
  • Top with sea salt and place back in the freezer until the chocolate layer is hardened.
  • Store in the fridge or freezer. Enjoy!
