MAGGIE'S HOMEMADE VEGAN GF OREOS

Ingredients:

For the cookies:
  • 2 cups almond flour 
  • 1/3 cup Karen Berrios Cacao Powder 
  • 1/4 cup sugar
  • 4 tbsp vegan butter 
  • Dash of salt
  • 2-3 tbsp vegan creamer 
For the filling, beat together until smooth:
  • 4 tbsp vegan butter 
  • ~1/2 cup powdered sugar 

Instructions:

Cookie
  1. In a large bowl mix together the almond flour, cocoa, sugar, and salt. Add the softened vegan butter and mix with a fork until combined. Add just enough vegan creamer to bring together the dough. Wrap the dough in parchment paper and chill for about 30 minutes to an hour.
  2. Once dough is chilled, take out of fridge and roll out between parchment paper into about 1/8 inch thickness. Cut circles using whatever you have (I used a mason jar lid to make them jumbo!)
  3. Preheat the oven to 350° F. Line a pan with parchment paper and place circles on pan. Bake for 10-15 minutes depending on how big you made the circles!
  4. Let cool completely before sandwiching with the filling!
