NIKKI'S MINI BLUEBERRY CHOCOLATE CHIA MUFFINS
- 2/3 cup oat flour
- 1/3 cup Karen Berrios Cacao Powder
- 3 bananas, mashed
- 1 egg
- 1 tsp vanilla
- 1/4 cup coconut sugar
- 3 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 tbsp Karen Berrios Chia Seeds
- 3/4 cup dried blueberries
Preheat oven to 350F. Spray mini muffin pan with coconut oil. Mix mashed bananas, egg, vanilla, and coconut sugar in a bowl. Then add the rest of the ingredients besides chia seeds and blueberries and stir until combined. Then fold in the chia seeds and blueberries. Spoon into muffin tin and bake for 10-12 minutes! Enjoy!
