NIKKI'S PUMPKIN CRUNCH CUPS

Ingredients:

Chocolate Crunch Layer:

Pumpkin Layer:
  • 1/2 cup pumpkin purée
  • 2 tbsp maple syrup
  • 3 tbsp vanilla spice sunflower butter (sub any nut/seed butter)
  • 2 tbsp coconut oil
  • 1 tsp pumpkin spice

Instructions:

  • Mix all the ingredients together for the chocolate layer and use half to line bottom of silicone mold.
  • Freeze while you make pumpkin layer.
  • Mix all ingredients together in a bowl and pour over bottom layer of chocolate.
  • Top with the rest of the chocolate mixture and freeze again till set.
