
NIKKI'S PUMPKIN SPICE CARAMEL CUPS
Ingredients and Instructions:
Base:
- 1/2 cup oat flour
- 1 tbsp Karen Berrios Lucuma Powder
- 1/2 tbsp pumpkin spice
- 2 tbsp pumpkin purée
- 2 tbsp vanilla spiced sunflower seed butter
- 1 tbsp maple syrup
- Dash of vanilla extract
Add all ingredients together in a bowl and press the dough mixture into silicone cupcake molds. Freeze.
Caramel layer:
- 1/2 cup pitted dates, soaked
- 2 tbsp pumpkin purée
- 1 tbsp vanilla spiced sunflower seed butter
- 1 tsp pumpkin spice
- 2-3 tbsp nut milk
Add all ingredients to a food processor and blend until nice and creamy. Pour over base. Freeze while you melt chocolate.
Topping:
- 1/2 cup dark chocolate melted
Melt chocolate and pour over caramel and freeze again till set (at least an hour)
