SUPERBOOSTER SALAD

INGREDIENTS:

SALAD:
  • Lettuce mix
  • Kale leaves
  • 1/2 cup fresh baby spinach
  • 1/2 cup chopped mango
  • 1/2 cup grated carrot
  • 1/2 cup cooked peas
  • 1/2 cup chopped almonds
  • 1/2 cup goat cheese
  • 1 tablespoon Karen Berrios Chia Seeds
DRESSING:
  • 2 tablespoons honey
  • 1 tablespoon mustard
  • 1/4 garlic clove minced
  • 1/4 cup balsamic vinegar
  • 3/4 cup extra virgin olive oil
  • Salt to taste
  • Pinch crushed black pepper finely ground

INSTRUCTIONS:

In a bowl, combine all ingredients to salad.

In a small bowl, combine all ingredients to dressing. Whisk until well combined.
Drizzle dressing on salad and toss to coat... Enjoy!
