- 1/2 cup butter
- 1/3 cup coconut sugar
- 1/3 cup Karen Berrios Lucuma Powder
- 1 large egg
- 1 tsp vanilla
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 1/4 cup almond flour
- Desired amount of Karen Berrios Cacao Nibs
Whisk melted butter, sugar, lucuma powder, and egg until combined. Add in the dry ingredients and mix until fully incorporated. Use a cookie scoop and drop dough unto a large baking sheet lined with parchment, and cook at 350 for about 10 minutes.
Once they are done baking, store in the fridge for at least 40 minutes before layering with your favorite ice cream or nicecream recipe!
