Vegan cheesecake with Strawberry chia jam for Mother's day

You have to make this quick vegan strawberry cheesecake for Mother's day, it tastes just like the always cheesecake but healthy. It is the perfect low sugar snack or dessert with strawberries as a high source of vitamin C. The recipe is vegan, dairy-free, refined sugar-free, and gluten-free

Ingredients:

Crust:

-1 cup almond flour vanilla gluten

-free cookies

-3 tbsp. coconut oil (melted) or vegan butter

Filling:

-Cornstarch cream(¾cup of plant-based milk + ½ cup monk fruit (powdered)+ 3tbsp. cornstarch)

-3-4cups of block firm tofu or cashew seed(soaked)

-1 tbsp. lemon juice

-2 tbsp. plant-based milk-vanilla extract

-1/8 tsp. salt

-14tbsp. coconut oil

Strawberry chia jam:

-¾ cups strawberry

-2 tbsp.Karen Berrios Yacon syrup

-½ tbsp. lemon juice

-1 tbsp.Karen Berrios chia seed

-1 tbsp. water



Cooking instructions:

1. Combine crust ingredients. Pour the mixture into your cake ring and set it aside.

2. For the cornstarch cream, mix all ingredients in a saucepan until well combined. Cook over medium heat for 2 minutes and then let it cool.

3. Blend all ingredients for the filling and pour it into your cake ring

4. Cook all ingredients of Strawberry chia jam except the chia. When the jam is smooth add the chia seeds.5.Garnish your cheesecake with jam and fresh fruit. Enjoy as the perfect dessert for mother’s day
