LUCUMA BUN BREAD PUDDING

Ingredients:

  • 6 sweet, pull-apart rolls (could totally swap for 6 slices of regular bread of choice)
  • 2 tablespoons of creamery butter
  • 2 cups milk of choice
  • 1/2 cup coconut sugar
  • 2 tablespoons Karen Berrios Lucuma Powder
  • 2 cage free eggs
  • 1/2 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt

Instructions:

Preheat oven to 350 degrees. Add all ingredients except bread and eggs to a saucepan over medium heat until butter melts, then let cool.

In a 6 cup baking dish, fill with 2in” cubes of buns or bread. Next, whisk in eggs to cooled milk mixture and pour evenly over rolls.

Bake for 30-45min, or until the edges are browned, but a wobbly custard consistency is set. And most importantly, enjoy😋
